Oats are great source vitamins, minerals, fiber and antioxidants, and bananas are rich in potassium, and also in magnesium, another mineral necessary for proper nutrition.
You can add chocolate chips to these muffins, we added dark chocolate and it tasted so good!
2. Whisk the dry ingredients (oats, cinnamon, salt and baking powder, sugar) in a large bowl. You can sift the dry ingredients using a whisk. The whisking motion will add air to them – if dry ingredients are light and fluffy it will be easier to mix when adding the wet ingredients.
Â
3. In a separate bowl, combine bananas, milk, and egg. Whisk until smooth, about 2 minutes.Â
Â
4. Pour the two mixtures together into the large bowl and using a hand whisk, stir until completely incorporated but avoid over-mixing. That’s why I prefer hand mixing instead of using a hand mixer.
Â
5. Transfer the batter into a prepared muffin tin pan. We added chocolate chips into the batter before placing it in a muffin pan or you can sprinkle on top. Place these guys in the oven and bake for about 12-15 minutes, checking until a toothpick inserted in the middle of the bake comes out clean.
Â
6. Take the cake out of the oven and let it cool for at least 15 minutes. Remove from the muffins from the tins and transfer to a serving dish. These go great with peanut butter or regular butter!
